At Bistro, we believe that great food starts with great ingredients. That’s why we are committed to sourcing from local artisans who share our passion for quality, sustainability, and creativity. From organic farmers to craft cheesemakers, the people behind the ingredients we use play a crucial role in shaping our menu and the flavors you enjoy. Join us as we celebrate our local partners, whose dedication and craftsmanship elevate every dish we serve.
1. Farm-Fresh Vegetables from Green Valley Farm
Nestled in the rolling hills just outside the city, Green Valley Farm is a family-run operation dedicated to sustainable, organic farming practices. For over two decades, they have been providing us with some of the freshest seasonal vegetables, from vibrant heirloom tomatoes in the summer to crisp winter kale. Their philosophy is simple: grow food that is as good for the planet as it is for the palate. “We believe in letting the natural flavors shine,” says Farmer David, who oversees the farm. “Our produce is grown with care, and that love is something you can taste in every bite.”
At Bistro, their produce is showcased in dishes like our Roasted Beet Salad with goat cheese and candied walnuts. The beets are harvested at their peak, roasted to perfection, and paired with creamy local goat cheese for a dish that truly celebrates the bounty of the season.
2. Artisanal Cheeses from Blue Ridge Creamery
Located in the heart of the countryside, Blue Ridge Creamery has been crafting small-batch cheeses with a commitment to tradition and quality. Their cheeses, made from the milk of grass-fed cows, are rich, creamy, and packed with flavor. Each wheel is aged to perfection, developing complex flavors that reflect the unique terroir of our region.
One of our favorites is their Aged Cheddar, which features prominently in our Cheese and Charcuterie Board. Paired with local honey, house-made preserves, and freshly baked bread, it’s a true showcase of the best our region has to offer. “Cheese is a living thing,” says Master Cheesemaker Susan. “It’s influenced by the seasons, the weather, and even the mood of the cows. Every batch is a little different, and that’s what makes it so special.”
3. Fresh Seafood from Coastal Catch
Our seafood is sourced from Coastal Catch, a collective of small-scale fishermen who practice sustainable fishing methods along our local coastlines. Their dedication to sustainable practices ensures that the fish they provide is not only of the highest quality but also responsibly caught, with minimal impact on the environment. “We believe in fishing responsibly, so our oceans remain healthy for generations to come,” explains Fisherman Jack. “That’s why we focus on small-scale, hand-line fishing techniques that are gentle on marine life.”
You can taste the difference in our Pan-Seared Scallops, served with a light lemon butter sauce and a sprinkle of fresh herbs. The scallops are sweet, tender, and incredibly fresh — a true testament to the care and craftsmanship of our local fishing partners.
4. Artisan Breads from Baker’s Hearth
Our breads are baked fresh daily by Baker’s Hearth, a local bakery renowned for its use of traditional methods and organic ingredients. Their sourdough, made with a 100-year-old starter, has a depth of flavor and a perfect crust that only comes from slow fermentation and skilled hands. “Good bread takes time,” says Head Baker Maria. “We let our dough ferment slowly, allowing the flavors to develop fully. It’s a labor of love, but the results are worth it.”
This commitment to quality is why we choose their Rustic Sourdough to accompany our soups and salads. Its chewy texture and slightly tangy flavor provide the perfect balance to our dishes, adding a comforting, homemade touch to every meal.
5. Craft Beverages from Riverbend Brewery
At Bistro, we are proud to offer a range of craft beers and ciders from Riverbend Brewery, a local favorite known for its innovative brews and commitment to using locally sourced ingredients. Their beers are made in small batches, each one reflecting the unique flavors of the region. From the crisp, refreshing Farmhouse Ale to the rich and malty Smoked Porter, their offerings provide the perfect accompaniment to our menu.
Our chefs often collaborate with the brewers at Riverbend, incorporating their beers into dishes like our Beer-Braised Short Ribs, where the ale adds a deep, caramelized flavor to the tender meat. “Brewing is both a science and an art,” says Brewmaster Liam. “We love working with Bistro to create pairings that bring out the best in both the food and the beer.”
